I can begin to speak about food in Hunan province as I just moved here a few weeks ago. This province is known for its spicy and sour food. Indeed, they do use a fair amount of chilli, and I have seen both green and red hot peppers in the dishes and at the markets. Further, they are a very meat-heavy province, with pork being a staple. I had lunch with a local man the other day and he said that for people here, going a day without pork makes one feel a little strange.

Interestingly, of the people I've talked to from Sichuan province (also known for their spicy food), they don't think it is hot enough here.

My musings and discoveries so far on local food. I do post on food regularly on my own blog.
